A gavilla is a hand of tobacco, a bundle of cured leaves tied together at the stem end. Hands are the unit workers handle during fermentation: they are stacked to build a pilón, shaken out when the pile is turned, and moistened between stages. The number of leaves in a hand varies by farm and factory.
